Healthy Hot Chocolate Truffles

If hot chocolate doesn’t SCREAM holidays, then I’m not sure what does. I’ve always been a chocolate fiend, so this was easily my favorite festive drink growing up, and really nothing has changed on that front.

I’ve been whipping up a lot of cozy drinks lately with my Skin-Loving Peppermint Mocha, Golden Pumpkin Spice Latte, and Salted Maple Chai Latte, so I wanted to find a new way to enjoy the hot cocoa we all love.

Along with cacao powder, one of my favorite antioxidant-rich ingredients, these delicious truffles include more of my superfood favorites such as walnuts and flax, both of which I have in my pantry at all times. Walnuts specifically make my list of the healthiest nuts we should be eating, which you can read all about in Why I’m Nuts About Nuts (& You Should be Too).

Flax seeds are likewise incredibly nutrient-dense, as they’re loaded with healthy Omega-3 fats, protein and dietary fiber. Sprinkle the seeds whole into your daily yogurt and oatmeal or use flaxseed meal in protein balls, healthy baked goods, smoothies and more.

While these little bites resemble my many energy ball recipes, the result is a little softer and more decadent, making them the perfect dessert to whip up this holiday season.

Allow the dough to chill slightly before forming into balls, and then roll in cacao powder or crushed candy canes for a festive finishing touch. I recommend storing these truffles in the freezer for a denser dessert, and I’ll warn you that they do soften quickly at room temperature.

So while I’m not one to turn down a cozy mug of warm hot cocoa, especially around the holiday season, it’s always fun to mix it up with a festive treat this time of year. Make a batch of these superfood-filled truffles to satisfy your sweet tooth or share with family and friends this Christmas!


  YIELDS 10 bites

  
Ingredients
  • 1/2 cup walnuts
  • 3/4 cup pitted dates
  • 1/2 cup almond flour (more if mixture is too soft/moist)
  • 1/4 cup cacao powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • crushed candy canes for rolling (optional - can also drizzle with melted chocolate, sprinkles, etc.)
 
Directions
 
1. Place walnuts and dates in a food processor or high speed blender.
2. Mix until a thick paste or ball forms. Add cacao powder, almond flour, vanilla, and salt. Mix until well-incorporated.
3. Scoop and roll into balls. You can place dough in the fridge for ~15 minutes to firm up if needed.
4. Roll in crushed candy canes or more cacao powder.
5. Store in the fridge or freezer. Enjoy!
