While I’d be lying if I said I was a huge football fan, the Chiefs heading to the Super Bowl this year has me much more excited than usual. So in typical Goodness With G fashion, I’ve begun to brainstorm some ways to celebrate the big day in my own kitchen with game day snacks that everyone will love AND do good for your body at the same time.
And if there’s one thing I love to have around when entertaining, it’s dips. While I’m typically quick to whip up a batch of hummus, I decided to get a little more creative with this recipe. Plus, I have dreams about a similar Roasted Red Pepper Dip on the menu at Enjoy Pure Food, one of my favorite healthy spots in Kansas City, so a way to make it at home was necessary.
While you surely can use jarred red peppers, I can’t tell you how much of a difference it makes to whip up your own. They taste a thousand times better and are so easy to make! Plus, go ahead and make a double batch to use in my Creamy Roasted Red Pepper Pasta while you’re in the kitchen – it’s truly a favorite around here.
And if their incredible flavor isn’t enough to convince you, let’s just take a look at the amazing health benefits of red peppers. These colorful veggies provide a healthy dose of antioxidants, B vitamins and more. They’ve even been seen to dramatically improve eye health, prevent anemia AND are one of the richest dietary source of vitamin C available.

Along with the peppers, you’ll only need a few other simple ingredients including walnuts, garlic, lemon juice, and olive oil. Just throw all of the above in your food processor or high speed blender, and allow it to all come together to your desired consistency. Easy enough, right?
But what is any good dip without something crunchy to scoop it all up with? I highly recommend serving up this easy, yummy recipe with some chopped veggies, crackers or chips of your choice. Lately, I’ve been obsessed with these Kibo Foods Chickpea Chips, not only because they’re plant-based, vegan, gluten free and non-GMO, but also because they’re packed with protein & crazy addictive.
Overall, regardless of which team you’re rooting for on Super Bowl Sunday, this dip is a must for your game day watch party. Serve it alongside my Roasted Beet Hummus, and you’ll really be the day’s MVP .
- 3 red bell peppers
- 1 avocado oil
- 1 cup raw walnuts
- 1 garlic clove
- juice of 1 large lemon
- ½ cup fresh basil
- 1 tbsp olive oil
- salt and pepper to taste
