Blame it on my name, but peaches have always been one of my all-time favorite fruits. And since Texas peaches are the best in my opinion, I’ve been taking advantage of the summertime abundance in every way that I can. Whether it’s simply enjoying fresh, juicy peaches on their own or including them in recipes such as my Peach Soft Serve Nice Cream or Fresh Peach Chia Jam, I just can’t get enough.
But sadly, as August is already upon us, I know that these perfect stone fruits will soon be out of season (sigh). Fear not, though! I’ve already mentally prepared myself and created this delicious peaches and cream recipe that you can enjoy all year long.
And as y’all know, I’m a huge protein ball lover. I enjoy having a batch on hand at all times for a quick afternoon snack before teaching at CorePower or as an evening treat to satisfy my sweet tooth. As for this recipe, you’ll get the protein and creaminess you want from the cashews and coconut butter, while two types of dried peaches bring all of the fruity goodness. Cap Beauty Coconut Butter specifically is my all-time favorite brand, and trust me, one taste and it’ll be yours too.
Next, the freeze-dried peaches break up in the blender to add a punch of peachy flavor to every bite. I also love the addition of dried peach chunks for a little texture and chew.
While I’m attracted to peaches for their incredible flavor alone, stone fruits of all sorts are likewise filled with incredible nutrients. The vitamins, minerals and fiber in peaches have been seen to protect against cancer, promote heart health and improve digestion. All the more reason to enjoy them this summer!
Another key ingredient in these peachy protein balls is one of my favorite nuts–cashews. Their creamy flavor and buttery texture make them the perfect addition to these and many of my other recipes, both sweet and savory.
Despite being incredibly yummy, cashews are also packed with vitamins, minerals and antioxidants to protect against heart disease, optimize blood health and fight diabetes and cancer. Plus, the healthy Omega-3 fats in cashews help healthy weight maintenance and reduce the risk of stroke, while also keeping you full and satisfied throughout the day.
So while I encourage you to enjoy fresh peaches in all of their glory this summer, don’t forget that these stone fruits can also be utilized in recipes any time of year.
Simply throw all of these clean, easy ingredients into your food processor or blender, and your peaches and cream craving will be satisfied in minutes. Summertime, anytime never tasted so good and nourishing!
- 1 cup raw cashews
- ⅓ cup coconut flour
- ½ cup freeze dried peaches, roughly chopped (plus more for rolling, optional)
- ⅓ cup unsweetened dried peaches, chopped into small pieces
- 5 Medjool dates, pitted
- 3 tbsp coconut oil, melted
- 3 tbsp coconut butter
- 1 tsp vanilla extract
- ½ tsp salt
- a couple tbsp of water to moisten (if needed)
