When it comes to dessert, I’m always looking to have something on hand when the craving strikes. But I also believe that delicious desserts shouldn’t take tons of baking expertise or time to turn out great.
This is exactly why I often opt for no-bake recipes, like these Healthy Cookie Dough Bars in a pinch. They save me from having to turn on my oven (a major win), plus they only require a few staple ingredients that I already had sitting in my pantry.

First things first, I use cashew butter to give these bars their creamy texture and “cookie dough” flavor. You can absolutely opt for another type of nut or seed butter if preferred, though! Just note that the result will end up with a more dominant flavor of that particular option.
Likewise, I added almond flour as a binder, as I always have a bag in my pantry or freezer. Plus, it’s a super nutrient-dense addition to baked goods. If you have a nut allergy, I recommend swapping for oat flour!

As for the chocolate chunks, I chopped up a bar of my favorite Evolved Chocolate, as it’s sweetened with coconut sugar, made with clean, organic ingredients and is super tasty. I likewise used this for the chocolate topping, but feel free to use whatever chocolate bar, chunks or chips you have on hand and love most.
The best part about this recipe is that you just simply throw together your “cookie dough”, top it with the simple chocolate topping, sprinkle with flaky sea salt, and that it!
