I recently received several boxes of Three Wishes cereal which is easily one of my new favorite pantry staples! Not only is it delicious but it's also made with cleaner, simpler ingredients which I appreciate (and your family will too).
While you simply cannot beat a classic bowl of cereal, I wanted to see how I could get creative and put this delivery to good use. Thus, these No-Bake Cereal Crunch were born! They're insanely delicious and make for the yummiest dessert to have stocked in your freezer.
While I, of course, used Three Wishes cereal, you can easily use whatever you have on hand or prefer. For this recipe I used their cinnamon flavor, and it was perfect!
To keep these bars together, you'll whip up a mixture including the nut butter of your choice (I typically would have used peanut butter but I only had cashew butter on hand, and it turned out delicious!), coconut oil, maple syrup, vanilla, and a pinch of salt if your nut butter is unsalted.
Warm this through over the stovetop to incorporate completely. Pour it over your cereal, and mix before transferring to a lined baking pan. You could also turn these into individual bites by using lined muffin tins as well!
Top it off with some melted chocolate, and the freezer does the work for you. I personally always love adding a sprinkle of flaky salt for a little extra goodness.
Store these in the freezer as they will melt quickly at room temp. Give me a shout if you whip them up!
Yields: 9-12 bars
Ingredients
- 1 cup creamy nut butter (peanut, cashew, etc.)
- 1/3 cup maple syrup
- ¼ cup coconut oil, melted
- 1 teaspoon vanilla extract
- pinch of salt (if your nut butter is unsalted)
- 3 1/2 cups cereal of choice (I use and love Three Wishes)
- ~1/2 cup chocolate chips
- Flaky sea salt for topping, optional
Directions
1. Add nut butter, coconut oil, maple syrup, vanilla, and salt to a small sauce pan. Warm over low/medium heat until the edges are bubbling, stirring regularly.
2. To a mixing bowl, add cereal and warm nut butter mixture. Stir to coat completely.
3. Pour mixture into a parchment-linked baking dish (you can also use lined muffin tins if you'd rather), smoothing into an even layer.
4. Melt chocolate in 30-second intervals in the microwave or in a small saucepan on the stovetop. Pour melted chocolate over the cereal bars, using a spoon or spatula to spread.
5. Place in the freezer for about an hour to set up before sprinkling with flaky sea salt and cutting into 9-12 bars. Store extras in the freezer. Enjoy!
