I'm always trying to think of fun ways to connect with those in my Goodness With G community and show a little extra appreciation. So, this month we're starting a fun new "Recipe of the Month" series where those who make and share a photo of their remakes will be entered into a gift card giveaway!

What I love about these cute little bites is that they're so incredibly easy to make AND require absolutely no baking. Given how hectic this season can be, it's always nice to have a treat that you can whip up for guests in no time.
And while these make a perfect dessert the whole family will love, they also make a delicious meal prep treat to enjoy all to yourself.
You'll only need a few easy ingredients including almond flour, oat flour, coconut oil, maple syrup, vanilla extract, almond extract, and salt. The result is an edible dough that tastes just like your favorite sugar cookie.
To top them off, I made a simple icing/glaze from melted coconut butter, which you can easily find at most grocery stores and online. It provides tons of healthy fats and a creamy drizzle you'll want to put on everything.
As an alternative, though, you can always make a glaze mixing powdered sugar and milk that would be incredibly tasty as well.
Finish these off with some rainbow or festive holiday sprinkles, and you're all set! I can't wait to see all of your amazing remakes this month :)
Makes about 10 bites
Ingredients
- 1 cup oat flour
- 1 cup fine almond flour
- 3 tbsp coconut oil, melted
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- pinch of salt (to taste)
- rainbow sprinkles & 3 tbsp melted coconut butter to top
Directions
1. Add all of the ingredients to a bowl, & mix into a well-incorporated dough.
2. Scoop & roll into balls.
3. Place on a parchment-lined plate or baking sheet. For the glaze, microwave coconut butter until soft & pourable.
4. Top with glaze & sprinkles. Store in the fridge or freezer, & enjoy!
