With Valentine’s Day right around the corner, I’m looking for any excuse to enjoy all of the festive treats. And for those of you who likewise want to enjoy a sweet treat this holiday without the hassle, these Healthy Red Velvet Cake Balls are the perfect solution.
The texture is perfectly cake-y, dense and dreamy! Trust me, whether or not you’re a big fan of red velvet or not, these little bites will be a fan favorite.
Not only are they an ode to a classic, but this version is also packed full of super nutritious ingredients. These cute little bites use almond flour (always a pantry staple in my world) and cashew butter as the base. Cashew butter is another one of my go-to ingredients for baking because it has a mild flavor that’s not as overpowering as other nut butters like peanut or almond.
Plus, cashews are super nutrient-dense and a great addition to a healthy diet! They’re full of unsaturated fat that’s linked to reduced risk of heart disease, and they’re also low in sugar and a great source of plant-based protein.
But to give these their signature flavor, cacao power is a must. It’s always my go-to for chocolate recipes as it’s super nutrient-dense (hello, antioxidants) and easy to use.
Yet the real star of the show? Red beet power! Yes, you read that correctly. For this recipe, we’re ditching the gross red food coloring and opting for a more natural alternative. But don’t worry! This won’t impact the taste! Plus, you’ll benefit from all of the good things beets have to offer.
They’re one of my personal favorite superfoods as they’re SO dang nutrient-dense. Beets provide a good amount of folate, manganese and copper (just to name a few) to help regulate blood pressure, fight inflammation, boost athletic performance, support brain health and more.
Finally, what really makes these bites so tasty is the white chocolate chips. I used the Lily’s Sweets brand, and they’re super tasty! You can find these at Whole Foods (or online) or use regular chocolate chips if you prefer.
Mix it all up and roll into balls, and that’s that! You can store the extras in the fridge or freezer before sharing with your Valentine (or save for yourself ).
