Healthy Blueberry Banana Bread

One day I randomly got a craving for blueberry banana bread, and I haven't been able to move on since. Why? I'm not sure, but I have to say I'm proud of the execution!

I'm typically more of a chocolate girl when it comes to my sweet treats (which is why my Healthy Chocolate Chip Banana Bread is a favorite over here), but there's just something about blueberries in baked goods that always calls my name.

I also won't life, this recipe took me three tries to get right, but I'm very happy I stuck with it! Almond flour can be a little trickier (and denser) than regular flour which, when paired with the blueberries, created a much moister result than I was looking for.

After a couple of tweaks, though, I think I found the right balance that's still super moist and delicious but holds up a bit better.

I love that this bread only requires a handful of easy, wholesome ingredients like bananas (of course), eggs, almond flour, maple syrup, and blueberries. Plus, if you're like me and tend to have some ripe bananas sitting sadly on your countertop, this is truly the most perfect way to put them to good use!

Mix all of the ingredients together, and pour the batter into a prepared baking tin. And because the blueberries are the best part of this bread, I like to sprinkle an additional handful on top.

Bake this up until the top is golden brown, and allow to cool completely before slicing. I love this served as is, with a little butter, nut butter, you name it. Pair with a cup of coffee, and you'll thank me😘.


Ingredients

  • 3 ripe bananas
  • 3 eggs 
  • 3 tbsp maple syrup or honey 
  • tsp vanilla extract
  • 2 cups almond flour
  • 1 tsp cinnamon
  • 1 tsp baking powder 
  • 1/4 tsp salt
  • 3/4 cup blueberries, plus more for topping
Directions
1.  Preheat oven to 350 degrees. Line a baking tin with parchment paper and lightly grease. Set aside.
2. To a large mixing bowl, add bananas, using two forks to mash completely. Add eggs, maple syrup, and vanilla. Whisk to incorporate.
3. Add almond flour, cinnamon, baking powder, and salt. Mix to create a well-combined batter.
4. Add in blueberries, and mix to incorporate.
5. Pour into prepared pan, smoothing into an even layer. Top with additional blueberries.
6. Bake for ~60 minutes. Option to cover with foil for the last 20-30 minutes if the top is browning too quickly.
7. Allow to cool completely before slicing. Enjoy!
