For those out there who are as obsessed with pickles as I am, this recipe is for you. Not to be weird, but I honestly would say that pickles are one of my favorite foods, and I'm always looking for ways to sneak them in meals and recipes.
Since it's summer and pasta salad is always a staple this time of year, I thought why not try a dill pickle spin on this classic? And boy, I was not disappointed.
This Dill Pickle Pasta Salad is super simple to whip up and makes for the tastiest side dish to bring to all of your potlucks, picnics, and holiday get-togethers!
First you'll mix together some Greek yogurt (you could use mayonnaise instead, but I love this higher protein swap), dijon mustard, brine from your favorite pickles (this is the key ingredient, in my opinion), minced garlic, and black pepper.
This makes a super creamy, flavorful "sauce" with ingredients you likely already have ready to go in your fridge.
As for the rest of the pasta salad, I started with the Jovial Foods Farfalle (bow tie) pasta, as I think this is the best shape for pasta salad! You can, of course, use whatever pasta you like best. Jovial Foods is my personal favorite as it's made from super simple, nutritious ingredients and is gluten free without compromising texture.
For some extra flavor and crunch, I also threw in some shredded carrots, red onion, fresh dill and parsley, and, of course, some chopped pickles.
Mix this all up, and you have the tastiest, healthy summer side dish that people will no doubt leave asking the recipe for!
Yields 4 servings
Ingredients
- 1 cup Greek yogurt
- 1 generous tbsp dijon mustard
- 2 tbsp pickle brine
- 1-2 garlic cloves, finely minced
- 1/4 tsp black pepper
- 1/4 red onion, finely sliced
- 1/2 cup shredded carrots
- 3-4 dill pickle spears, chopped (about 3/4 cup)
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh parsley
- 1 box pasta of choice (I used the Jovial Foods Farfalle) - 12 oz
Directions
1. Add yogurt, dijon mustard, pickle brine, garlic, and black pepper to a large mixing bowl. Mix to combine combine completely.
2. Cook pasta according to package directions, a bit al dente. Drain and rinse well in cool water.
3. Add pasta to mixing bowl with red onion, carrots, chopped pickles, dill, and parsley. Mix to combine and coat completely.
4. Serve and enjoy! Store extras in an air-tight container in the fridge.
