Avocado Chocolate Truffles

While I tend to add avocado to most meals, I’ll admit that every now and then I end up with one or two sitting on my counter, rapidly getting riper. I recently found myself in this situation, but rather than simply throw them away, I decided to get creative with these delicious truffles.

The idea of avocado in a sweet recipe might cause you to think twice, but this ingredient is extremely mind and brings lots of creaminess that lends itself well to most any dessert. Likewise, avocados are insanely nutritious and will make you feel confident that you’re satisfying your sweet tooth in the best way possible.

Specifically, avocados have become a star in the wellness world as they contain a wide variety of vitamins and minerals and provide tons of healthy monounsaturated fatty acids. These fats are linked to improvements in heart health, reduced inflammation and gene health to ward off cancer.

Plus, the fat in avocados is necessary for the body to be able to absorb the nutrients in other plant foods like fruits and vegetables. This powerful ingredient is also filled with digestive-boosting fiber, can lower cholesterol levels, protect your eyes and might help maintain a healthy weight. Seriously, what can’t they do?

But avocado isn’t the only nutritional powerhouse in these little bites, as raw cacao powder brings tons of health benefits to the table as well. Along with some chocolate-y goodness, duh  .

Cacao powder, unlike cocoa powder, provides antioxidants without the added sugars. The powerful polyphenols in cacao can improve brain function, reduce risk of heart disease and stroke and even fight depression.

Creating these truffles couldn’t be easier, and they’re great to prep for a little treat whenever your sweet tooth starts talkin’ to ya. But with all of the crazy health benefits, these are truly a dessert you can feel good about in every way!

Ingredients
  •  2  ripe avocados
  •  1 ½ cups sugar free or stevia-sweetened dark chocolate chips (I used Lily's Dark Chocolate Baking Chips)
  •  1 tsp vanilla extract
  •  1 tbsp maple syrup
  •  ½ tsp salt
  •  cacao powder for rolling

 

Directions
 
Add avocados to a bowl, and mash with a fork until completely smooth and no lumps are visible.
To another bowl, add chocolate and microwave in 30-second intervals, stirring until melted.
Stir mashed avocado, vanilla extract, maple syrup and salt into the chocolate until well-combined.
Place mixture into the fridge for 20 minutes to firm up.
Scoop and roll into about 18 truffles (number will vary depending on the size of your avocados and preference).

Place on a parchment-lined baking sheet.

Roll each truffle in cacao powder to coat completely.
Serve at room temperature, but store in the fridge.
